Natural Start Sweet Pumpkin Muffins
Pumpkin Muffins Made With Natural Start
1/4 c. coconut oil
1/2 c. honey
1 c. raw sugar
3 eggs
1 c. Natural Bread Start
1 15 oz can (or 2 cups) pumpkin puree
1/4 c. applesauce
In the first bowl, mix melted coconut oil with the honey and sugar, then add the eggs and whisk until well blended and creamy. Then add the start, puree and applesauce and mix until well blended.
In a separate bowl, sift together:
3 c. whole wheat flour
1 t. salt
1 t. baking soda
2 t. baking powder
1 t. cinnamon
1 t. allspice
1 t. nutmeg
1/4 t. cloves
1 1/2 c. chopped walnuts or pecans
Add the dry ingredients to the moist ones and mix together until combined. Stir in nuts.
Spoon 1/3 cup into greased or lined muffin tins, Allow to sit on the counter for a least 30 minutes. Preheat the oven to 350 degrees. Bake for 20-25 minutes or until toothpick comes out clean. Cool on cooling rack.
