Yummy Natural Start Cheese Crackers

1/3 cup melted butter
1 cup natural start or sourdough start
1 cup freshly ground whole wheat flour (I sift mine, there is no taste difference, just a difference in texture.)
Combine/knead until dough is stiff, place in a glass container, cover lightly with plastic wrap and let sit for 6-8 hours +.

Preheat oven to Put dough into your mixer, I use my food processor on the dough setting.

Add ingredients:
1/4 teaspoon baking soda
1/4 teaspoon garlic powder
1/4 teaspoon fancy mustard
1/4 teaspoon real salt
1 cup sharp cheddar (I use 1/2 cup extra sharp and 1/2 cup sharp)

Knead dough until all the cheese and spices are evenly distributed. Divide dough into 4 pieces. Roll very thin onto parchment, sprinkle on sea salt, lightly roll over with rolling pen to set in the salt, cut into small squares or into shapes and poke each square with a toothpick. Place parchment onto a flat cookie sheet and put into oven for 10-15 minutes, until they break easily when bent or are nice and toasty. Take them off the parchment and place on a cooling rack.
